My StrongStart centre opens one evening a month. It offers an opportunity for the whole family, even older children to come in to play and eat together. This month I chose today to host the event so we could enjoy pancakes together.
I told the families that I would supply the pancakes if they brought toppings to share.
I found recipes for pumpkin pancakes, oatmeal cookie pancakes, apple dipped pancakes, blueberry pancakes and regular (from a mix) pancake.
A couple of the families brought their griddles to help cook. We had a variety of topping and sides for the pancakes. Such as raspberries, blueberries, sausages, ham, cooked mushroom, spinach with bacon and one dad scrambled eggs for us.
We pushed all our tables together in order to sit together and get to know each other better. Potlucks are great for building community. Most of the same families attend every month and we all work together to prepare the meal (either providing food or cooking it at the school) and clean up after.

Happy Pancake Day
Our day started with banana pancakes. We have a few children that have a gluten intolerance so this recipe was perfect for them to cook and eat. And they are very easy to make.
First peel the banana, peel, peel the banana.
Next slice the banana, slice, slice the banana.
Then mash the banana, mash, mash the banana.
Then add two eggs to the banana and stir really well.
Cook it like a pancake and eat it.
While we were making the banana pancakes it reminded me of the song “Go Bananas” so we sang it at circle time.
Bananas unite! Peel banana, peel, peel banana.
