A New Recipe

This week we made Apple Cinnamon Quinoa Oatmeal Muffins.
You can find the recipe at Family Food on the Table.
 We started by peeling the apples.
Then we gathered the rest of the ingredients.
One cup of oatmeal,
and one cup of quinoa (already cooked).
Cinnamon, brown sugar and white sugar smell so good.
Blend them altogether.
Next we added two eggs,
and the apples.
Ready to scoop them into the greased muffin tins.
Delicious.
I think we may make them again but change the apples for carrots.

Cooking with Bananas

Over the past few weeks we've made several recipes using bananas.
The first was Banana Bread Pudding.
I omitted the chocolate chips but after tasting, it may have been 
better with that sweetener. 
Another week we made banana ice cream using my Yonana machine.
You can do this with a food processor too.
This week we made Banana Granola.
All three were simple, delicious recipes.

Healthy Banana Chocolate Pudding

Today's snack was homemade pudding.
A very simple recipe that doesn't require cooking.
Only three ingredients; a banana, 1/2 cup greek yogurt and
2 tablespoons cocoa.
A food processor is required to make it nice and smooth.
I have a mini one and explained how it worked to the children.
We did a practice of turning it on to prepare the children for the noise.
Peel the banana and process it.

Fill the half cup with yogurt.
I bought vanilla flavoured so not sure if that changed the taste a bit.
Cream the yogurt and banana together
then add the cocoa.
I think 2 teaspoons would be enough.
Blend it altogether.
We made two batches so everyone got a good taste.

Banana Cookies

I found this simple recipe at Craftulate and decided to make it with the children
last week.
 
First thing was to mash the bananas.
Instead of using a masher the children peeled the bananas and put them
into ziplock bags.
Then pounded, squished and mashed them smooth.
 Next we measured in the oatmeal
 and the applesauce.
 We stirred in the milk and raisins.
Then scooped the dough into little muffin tins to bake.
They are surprisingly good.
Even without added butter, sugar or fat.
I think some cinnamon or nutmeg would be a nice addition.
But they are so simple that several families took the recipe home.

Pumpkin Mac & Cheese

We still had some pumpkin left from our Turk's Turbin pumpkin that we baked last week so today we made Pumpkin Mac & Cheese.

                         Start by grating two cups of cheese.

Melt a quarter cup of butter in a pan.  Add a quarter cup of flour mix to blend.

We moved the electric frying pan to the table so the children could help easier.

         After whisking in two cups of milk, mix in a cup of pumpkin. 
             Sprinkle with nutmeg and a teaspoon of dijon mustard.

                         Continue to whisk till smooth.

                  Add cooked macaroni and blend till coated.

                             Time to eat.  It is really good.

           So yummy that many had second and third servings. 
The recipe makes a lot so the adults tried it too.  Turk’s Turbin is a mild pumpkin so couldn’t really taste it.  Another way to sneak a vegetable into their food.
