We finished harvesting our potatoes this week.
While pulling out the plants we did manage to pull one potato still attached.
Then they dug in with enthusiasm.
Some of the children had helped harvest the other tubs and knew what
they were digging for.
Today we sorted the potatoes by size before figuring out how many.
We counted 38 potatoes today for a total of 127
from all the plants we grew this year.
Snack today was Potato Hotcakes made from potatoes I cooked and mashed last
night.
All the recipes we cooked this week came from Company’s Coming Potato
cook book.
One last recipe we enjoyed was potato candy.
Pinwheels
1/3 cup mashed potato
1/2 teaspoon vanilla
2 1/2 cups icing sugar
1/3 cup peanut butter (I used almond butter)
Stir potato, vanilla and icing sugar in large bowl until thick (I used more icing sugar then the recipe said). Turn out onto surface dusted with icing sugar. Knead until smooth, adding more sugar if necessary to make pliable but not sticky.
Divide into 3 equal portions. Roll each onto a piece of plastic wrap. Spread about 1 1/2 tablespoon of the peanut butter and roll up like a jelly roll. Wrap in plastic wrap and chill.
